    The crust was made with a poolish I made the day before. Then 300 grams of 00 flour, 300 grams of water, and 20 grams of salt. Then after mixing that together, I added another 200 grams of flour. Let sit an hour, then created 4 dough balls and let the sit another hour before stretching to create the pizza. The poolish was 200 grams of 00 flour, 5 grams of honey and 5 grams of yeast. Put in fridge for 16 hours and let come to room temp for an hour before mixing in with other ingredients.
