    This was suppose to be 70% hydration but I opened a new 55lb bag of Caputo 00 pizzeria flour and was much more hydrated then my other consumer bags got. This was more like 80% or so. I’ll have to add a little less water next batch to see how it does. Had to be real easy on the stretch due to how relaxed it was.

  2. Looks really nice but where’s the parmigiana? Wouldn’t that make it super soggy?
