If your question specifically concerns your pizza dough, please post your full recipe (exact quantities of all ingredients in weight, preferably in grams) and method (temperature, time, ball/bulk-proof, kneading time, by hand/machine, etc.). That also includes what kind of flour you have used in your pizza dough. There are many different Farina di Grano Tenero “00”. If you want to learn more about flour, please check our [Flour Guide](https://www.reddit.com/r/neapolitanpizza/wiki/resources/flour-guide).

Buffalo mozza not common in the states?
It‘s like the only thing I use to make mine.

Lookup Alino Pizzeria I believe they are in Mooresville NC, they do proper Neapolitan pizza and use buffalo mozzarella too. I used to very frequently visit their Mall of Georgia Branch before they closed

Your comment made me look into buffalo mozzarella and lactose out of curiosity. It seems buffalo mozz _does_ have lactose, generally it may have even more lactose than regular milk mozz. Is “di bufala” a specific brand that happens to be lactose free?
Pizza looks awesome!

If you’re in Winston Salem then definitely check out Mission Pizza. It’s on a whole other level compared to cugina.
