500 ml tomato passata
200 g spaghetti – or bucatini of your choice
150 g Guanciale – italian bacon from the pork cheek
10 g Pecorino Romano – grated
1 shallot, or 1 red onion – is purely optional
1 small red chili
1 tbsp olive oil
2 tbsp white wine to deglaze
For seasoning we need salt and black pepper according to your taste – but be careful, the bacon and cheese also contain some salt.
