Spaghetti alla Norma – Niculin’s Italian Cuisine | Creamy Spaghetti with Eggplants and Tomatoes
Ingredients (for 2 Persons):
– 2 Eggplants
– 1 Onion
– 3 Garlic cloves
– 2 Tomatoes
– Spaghetti (or other Pasta)
– Oliveoil
– Basil
Recipe:
1. Wash the Eggplants under water and cut them in slices and then in cubes
2. Peel the Onion and Garlic cloves and cut them in little pieces
3. Cut the Tomatoes in cubes and save the Tomato Water
4. Cut the Basil
5. Heaten up the Olive Oil in a Pan and add the sliced Onion and Garlic
6. Let it simmer and after some time add the sliced Eggplants and stir well
7. Prepare the Water for the Pasta
8. Add the Tomatoes to the Pan with the Eggplants
9. Season it with Salt & Pepper and stir well
10. Prepare the Pasta and taste the Sauce. Season as desired
11. Add Basil to the Sauce and let it simmer
12. Before the Pasta is ready, add some Cooking Water to the Sauce and let it simmer to create the desired creaminess
13. Add the Pasta to the Sauce and serve it
