In this episode of “Piatto,” we demonstrate how to use a KitchenAid Mixer (The KitchenAid Professional 600) to make a classic Italian Apple Cake with Lemon. Of course, you can use this cake recipe with any brand of stand mixer.

Sophisticated twist on the classic Italian Apple Cake. A delicious infusion of fresh rosemary and lemon zest with a bright tart apple topping. This easy KitchenAid mixer cake recipe is one of our favorite italian cake recipes!

TIP: Always use organic lemons for zesting.
TIP: To avoid deflating the cake, fold (rather than mixing) the last half of the flour mix and the lemon and rosemary. This will result in the best rise!

SERVES: 8

INGREDIENTS for ITALIAN APPLE CAKE
tart apples – 2 medium or large (granny smith work great)
lemons – 2 medium or 1 large, zested and juiced

eggs – 2 whole
sugar – 200 grams of white or fine cane

baking powder – 1 1/2 teaspoons
salt – 1/4 teaspoon
flour – 280 grams, all purpose (or ’00’)- King Arthur works great
butter (unsalted) – 120 grams, melted

fresh rosemary – 4-6 sprigs, 2 teaspoons chopped and the rest for topping
lemon zest – about a tablespoon (from lemons you juiced)

MAKE ITALIAN APPLE CAKE TOPPING
Zest and juice the lemon/s.

Peel and cut apples into 1/4 inch slices. Immediately drizzle in all the lemon juice to prevent browning and set aside.

MAKE ITALIAN APPLE CAKE BATTER
Sift together: Flour, baking powder, salt. Set aside.

Cream together: sugar and eggs until pale and fluffy.

Add half of the flour mix. Mix till absorbed.

Slowly drizzle in all of the melted butter. Mix gently till incorporated.

Mix (or fold in gently) the rest of the flour mix. Fold in the lemon zest and chopped fresh rosemary.

ASSEMBLE ITALIAN APPLE CAKE
Butter a 9 inch cake pan OR use a non-stick springform. You can also use parchment paper at the bottom for easier removal after baking.

Gently spread batter evenly in the cake pan. Top with apple slices. Top with sprigs of fresh rosemary.

BAKE THE CAKE
Bake in a pre-heated 355 F (180 C) oven for 35-45 minutes. Bake until an inserted toothpick comes out clean.
