Carbonara has been a tremendously popular pasta dish in the world.
I was taught by Italian chef how to make the authentic carbonara and the original recipe was made with guanciale, and I also understand the taste difference between guanciale and bacon, but the thing is not every one has guanciale at home and I want to focus my recipe to be easy and every body can copy at home easily, so, I used Bacon instead of guanciale.
I wish I live in Italy and have guanciale anytime I want, but it is kind of hard if you live in the states. (Unless you go to Wholefoods or Central Market like fancy grocery stores)
I’m pretty sure that I’ll create a video making carbonara with guanciale later on!
The recipe of Japanese style carbonara and probably a lot of folks have no idea what Japanese carbonara is. I’m from Osaka Japan, and I’ve witnessed how Japanese people love carbonara, but the thing is, in Japan, alla carbonara has modified to suit Japanese taste, so they use milk or heavy cream and put less cheese in their Carbonara because majority of Japanese people don’t really like the strong flavor that comes from the cheese. and I call it Japanese influenced carbonara and it’s more like Cream pasta like spaghetti Alfredo. ( I don’t put any of garlic, mushrooms, or flour tho)

300 ~350g of Pappardelle
200 ~ 250g of Bacon (Guanciale is better)
3 Egg Yolks
70~100g of Grated Parmigiano Reggiano
Fresh Ground Black Pepper
Japanese Carbonara
300~350g of Thick Spaghetti (no.7)
200~250g of Bacon
2 Egg Yolks
300~350ml of Heavy Cream
Fresh Ground Black Pepper
