Ricotta Gnocchi:
Ingredients:
-~2 cups Milk
-4 eggs
-~2 lbs Ricotta
-~5 lbs. Flour
Note:
These measurements are not necessarily exact. When making the gnocchi you need to feel the dough and decide when it is enough flour. Take reference from the video and create your own artisanal pasta.
Recipe:
Step 1:
In a big bowl add milk and eggs then mix. Add ricotta and mix again. Begin slowly adding flour until you have right consistency. Kneed dough and form into a log, cover and let sit for 5 mins.
Step 2:
Cut a piece off of dough and roll out, cut into small pieces, and give ridges (watch video for technique). Place on a lightly floured pan and put in freezer. Once frozen cook whenever you want.
