Recipe:
Ground Pork Meat 100% (I like 30% fat but 15 or 20% is ok too)
1.3 % Salt
.55% Pepper
.12% Dried Parsley
.8% Garlic Powder
.75% Onion Powder
.2% Dried Basil
.4% Paprika
.29% Red Pepper Flakes
.18% Fennel Powder
.5% Whole Fennel Seed
.25% Anise Seed
.27% Thyme
.27% oregano
.1% Light Brown Sugar (Or Turbinado Sugar)
1/2 cup of ice cold water for every 5 pounds of meat

Recipe for 5 Pounds of pork
In case you don’t want to do the math 🙂

Ground Pork w/fat = 5 pounds
30 grams of salt
13 grams of pepper
3 grams of parsley
18 grams of garlic powder
17 grams of onion powder
5 grams of dried basil
9 grams of paprika
7 grams of red pepper flakes
4 grams of fennel powder
11 grams of whole fennel seed
6 grams of anise seed
6 grams of thyme
6 grams of oregano
2 grams of brown sugar
1/2 cup of ice cold water

Get you seasoning ready by placing them in a small bowl. Whisk to make sure there are no clumps. Make sure your water is ice cold. In a large bin/bowl/tray or your kitchen aid mixer with the paddle attachment add your meat, seasonings, and water. Mix till the meat become very tacky and sticky. In a mixer it generally takes about 5 minutes. With your hands it might take a little longer (10-15 minutes)

Once you can grab a small handful and it sticks to your hand when you hold it upside down it is finished.

Taste for seasonings and if it’s good for you package it up in 1 pound portions to freeze.
