If you are wondering why this tomato sauce is orange, it’s because of the variety of tomatoes we used (specifically the Piccadilly) and the blending of the olive oil with the reduced tomatoes. Red+ yellow= orange! In fact, orange tomato sauce is a very common color for fresh homemade tomato sauce in Italy and largely depends on the variety of tomatoes used.
INGREDIENTS
For 1.5 cups (300 mL) of reduced homemade tomato sauce
or 2.5 cups (600 ml) of thin sauce
Grape Tomatoes (“Datterini”): 1 lb (400 g)
Roma or Piccadilly Tomatoes: 1 lb (500 g)
Vine Tomatoes (Ramati): 3/4 lb (300 g)
Olive Oil: 5 tbsp
Garlic: 2 cloves
Basil: 1-2 fresh leaves
Salt: pinch or to taste
For 3 cups (600 mL) of reduced homemade tomato sauce
or 5 cups (1200 ml) of thin sauce
Grape Tomatoes (“Datterini”): 2 lb (800 g)
Roma or Piccadilly Tomatoes: 2 lb (1 kg)
Vine Tomatoes (Ramati): 1.5 lb (600 g)
Olive Oil: 10 tbsp
Garlic: 4 cloves
Basil: 2-4 fresh leaves
Salt: 2 pinches or to taste
