I have been eating these Italian Stuffed Artichokes since I was young. Being Italian my mom and grandmother made them and we all loved them. A subscriber requested the recipe so I thought I would make a short video. If you have never had them give them a try. They are great for the holidays!
You might get hooked on them just like me!
ITALIAN STUFFED ARTICHOKES
INGREDIENTS
( I filled 8 small artichokes with the ingredients. If you have large ones you may not fill as many) I like a lot of stuffing in mine.
4 cups seasoned breadcrumbs – Panko is good
2 cups grated Pecorino Romano Cheese
4 Tbsp. chopped parsley
4 cloves of garlic – minced
6 to 8 Tbsp. olive oil
Salt and freshly ground pepper to taste
2 cloves of garlic – sliced
1 large can chicken broth – I use College Inn
INSTRUCTIONS
Combine your breadcrumbs, Pecorino Romano Cheese, parsley, minced garlic, salt, pepper, and about 3 or 4 Tbsp. of olive oil in a medium bowl.
Mix everything together well.
Wash the artichokes under cold running water.
Cut the stems off, flush with the bottom.
Cut the pointy ends of the leaves off the artichokes. II use a scissor.
Spread out the leaves of each artichoke and push the stuffing between
them.
In a pot large enough to fit the artichokes (you might need 2), add the sliced garlic cloves, 4 Tsp. of the olive oil and the artichokes.
Drizzle the remaining olive oil over the top of the artichokes.
Turn your heat on Medium and cook until sizzling – about a minute or 2.
Now add your chicken broth into the pot to reach half way up the sides of
the artichokes.
NOTE: Some people use water instead of the chicken broth but I
prefer the broth because it flavors the artichokes better.
Cover and cook (steam) until the artichokes are tender and a leaf
is EASILY pulled out. Takes about 45 minutes.
If your broth evaporates too fast just add a little more to the pot.
Transfer to a serving dish or platter and drizzle a little of the liquid from the pot over the artichoke.
Serve and Enjoy!
