This is a creamy filling dish that will go great with some Italian wine! Recipe feeds 4 hearty eaters, maybe 6 if serving appies and salad, or light eaters. Half or 3/4 the recipe if you don’t need that much. Rating: A GOOD for me and VERY GOOD for my husband.
Recipe (in order of use):
1 lb or more if you like a higher meat ratio) chicken breasts
1-2 tsp salt salt
1/2 to 1 tsp Pepper
2 tsp paprika
2 tbsp olive oil
1 med onion (1 heaping cup or about 1 1/4 cup)
1/2 green pepper
3/4 cup sun dried tomatoes in oil or dried but rehydrated
1-2 tsp Italian seasoning
1 tsp powdered or crushed garlic
1 lb penne pasta (GF or reg)
3 cups chicken broth
1 1/2 cups milk
4 oz cream cheese or herbed Boursin cheese
1/4-1/2 cup Parmesan cheese
