INGREDIENTS AND INSTRUCTIONS (for 4 people)

Trofie 250 g / 9 oz
Swordfish (cut in little cubes) 350 g / 12 oz
Eggplants (cut in little cubes) 350 g / 12 oz
Garlic 1 clove (optional)
Orange 1 (untreated)
Fresh mint (a bunch)
Extra virgin olive oil
Corn oil (to fry)
Salt and Pepper
Pistachios (Coarsely chopped – you may use a mixer. I prefer coarsely chop them with the bottom of a flat glass in a bag).
I use Sicilian Bronte Pistachio, it is a high quality pistachio and its taste is really special!

COARSELY CHOP YOUR PISTACHIOS
You may use a mixer. I prefer coarsely chop them with the bottom of a flat glass in a bag.

PREPARE YOUR EGGPLANTS
Cut the eggplants in little cubes,
sprinkle a good handful of salt to let them lose some bitterness.
Leave them for about 15 mins.
Then, rinse with some water
and dab with some kitchen paper.
Fry the eggplants in a pan with some corn oil at lively flame.
Then put them on absorbent kitchen paper to let the oil soak up.
Put them aside for a moment.

SWORDFISH SAUCE
In a low pot put some extra virgin olive oil
and the garlic.
Add the diced swordfish
and let it cook for two minutes at medium heat,
stir from time to time.
Now deglaze with the juice of half an orange
and put some little pieces of orange.
Cook for about 4/5 minutes.
Remove the garlic and stop the heat.
Add some salt and taste it (Make sure it is the right amount of salt).
Bear in mind the eggplants are salted too.

COOKING YOUR PASTA
Cook your Trofie in abundant salted boiling water.
Cook them “al dente”. It means, when you bite them, they should be soft but firm and never overcooked! Therefore, I suggest you to taste one of them few minutes before the cooking ending time.

SEASON YOUR TROFIE
When cooked, drain your trofie with a skimmer and put them directly into the saucepan. The fire is off!
Mix your trofie together with your swordfish sauce.
Then, add your fried eggplants and mix all together.

If the mix seems dry, add some salted cooking water and stir.

Finally, add some abundant finely chopped fresh mint,
sprinkle with some black pepper
and some coarsely chopped pistachios.

All done!
