This is one of my Mother’s favorite Italian Recipes; Chicken Cacciatore. Enjoy this wonderful Italian chicken recipe at home. Vito’s Italian Cucina makes it easy!

Recipe:
1 whole cut up chicken
1 large can of diced tomatoes with juice
1 white onion sliced in strips
11/2 cups of canned or fresh sliced mushrooms
½ of a yellow and ½ of an orange bell pepper both cut into thin strips
several cloves of crushed garlic
1 -2 Tbs. of Italian seasoning ( basil, rosemary, thyme, Italian parsley and some oregano)
2+ cups of marinara sauce
First heat a skillet with olive oil and 3 cloves of crushed garlic. Brown the chicken only, do not cook completely. Remove chicken from pan and set aside.
In the same pan, add several more cloves of crushed garlic, mushrooms, onions, and tomatoes and sauté for about 5 minutes until the onions are soft.
Add the chicken back into the pan. Pour the marinara sauce over the chicken and add a dash of salt and pepper.
Now lay the yellow and orange bell peppers on top and put a lid on it.
Let it simmer for an hour.
Take out the chicken and arrange it on a large platter. Spoon the sauce and vegetables over the chicken, and serve over pasta, Buon Appetito!!!
