Neopolitana or Naples style pizza, is a recipe of local heritage of the city of Naples. It is usually paired with tomatoes, mozzarella, basil and olive oil, and baked at high temperatures in a wood fired oven. This is a very easy pizza if you have the patience, I’m sure you will be surprised by the results.

Baking temp : 230°C
Baking time : 15-20 minutes
All you need :
Pizza dough
1 + 1/2 tsp instant yeast
1 + 1/4 cup water
500 g maida
1/4 tsp salt
Toppings
8-10 Sliced cherry tomatoes
Mozzarella cheese
1 tsp Mixed herbs
1 – 2 tbsp olive oil
Pizza sauce
Basil leaves
Method :
1. Add water and yeast into a bowl, mix well.
2. Add 1/4th the quantity of flour in, mix and then add salt. We do this as salt might kill the yeast, so by adding flour, we dilute the batter.
3. Slowly add in the remaining flour, and knead onto a surface including all the dry flour.
4. Knead for 5 min, folding and stretching to develop gluten.
5. Once a smooth dough forms, add to a bowl, cover and keep aside for 2 hours.
6. After 2 hours, take the dough out, cut into two portions, fold dough below, till top looks smooth. Roll on surface for a smooth base. Cover and keep for 24 hours in a warm place.
7. After 24 hours, with hands, shape into a pizza, without deflating, keep thicker edges.
8. Apply 1-2 tbsp pizza sauce, drizzle with mixed herbs, basil leaves, sliced mozzarella cheese, cherry tomatoes.
9. Bake in preheated oven at 230ºC for 15 minutes. 🙂
