Fregula (or fregola in Italian) is a pasta special to Sardinia. This peppercorn shaped pasta has been made by hand since medieval times; saffron has been grown on the island for even longer – it is thought the Phoenicians introduced it over 2000 years ago. And in this week’s episode, organic saffron producer Cumpanzos organised a cooking demonstration for us using both these ingredients.
