Everyone loves mashed potatoes but this easy potato pie recipe takes them to the next level and offers an amazing alternative. Creamy, buttery potatoes with ham and cheese is always a winner at any dinner table and this ‘pizza di patate’ (as we call it) promises to wow anyone who eats it. It’s a classic from my part of Italy and it’s so easy to make too.

⇨ For written recipe:
1. Mash those potatoes pretty quickly after they’re boiled, otherwise it will be too difficult as they’ll be too hard.
2. Work those potatoes with butter and milk well and MAKE SURE THE POTATOES COOL before adding the egg and parmesan. We don’t scrambled eggs!
3. Traditionally, we’ll put cooked ham in this recipe but you can feel free to experiment with any filling you like. Go for it!

220g SHREDDED MOZZARELLA
200g THINLY SLICED COOKED HAM
50g BUTTER
50g PARMESAN
2 EGGS
100ml MILK
