INGREDIENTS:
1 Lemon
5 Garlic Cloves (substitute 1 teaspoon Garlic Powder)
1 large Shallot (substitute 1 teaspoon Onion Powder)
3 Chicken Breasts
1 tablespoon Dried Basil
1 tablespoon Dried Parsley
½ teaspoon White Pepper
3 Sweet Peppers (substitute any other Pepper or Peppers)
1 ½ cups Filtered Water
1 teaspoon Garlic Bouillon (substitute any other bouillon)
1 teaspoon Chicken Bouillon (substitute any other bouillon)
2 tablespoons Cornstarch
Drizzle of Olive Oil
Salt and Pepper to Taste

INSTRUCTIONS:
1. Wash and cut potatoes. Place in a bowl and soak with cold water for 5-10 minutes. Chop shallot, garlic, and peppers. Slice chicken into thin cutlet and then cut into large chunks. Sprinkle cornstarch over the chicken and rub in. Set aside for 5 minutes.
2. Set INSTANT POT to saute on HIGH, and once hot, add a drizzle of olive oil. Add shallots and garlic. Saute for 20-30 seconds. Add chicken and saute for 1-2 minutes. De-glaze with water as needed. Add peppers. Stir well. Add dried spices and stir for 15 seconds. De-glaze the bottom of the pot completely. Zest and juice lemon into the pot. Add potatoes. Add salt and pepper to taste. Add all remaining water. Add garlic and chicken bouillon, and stir well. Hit cancel on the instant pot and set to HIGH PRESSURE for 6 minutes. Allow 10 minutes of natural pressure and perform a quick release. Enjoy!
