Very simple, delicious and healthy meal. The origins of this dish come from the peasants farmers, they would hunt and gather what they could for their meals combining different meats, to make a complete dish.
ยท 700 grams of Chicken (or Rabbit)
ยท 300 grams of Italian Sausage
ยท 2 onions, quartered
ยท 5 cloves of Garlic, whole and unpeeled
ยท 1 Red Pepper, quartered
ยท 3 Carrots, peeled and cut in half
ยท 1 cup of your favorite Olives
ยท 1/4 cup Capers
ยท 2 Bay Leaves
ยท Fresh herbs of the season (Basil/Rosemary/Oregano/Parsley/Time)
ยท 1/3 cup Olive oil
ยท 1/3 cup Balsamic Vinegar
ยท Salt and freshly ground pepper and crushed red peppers if you like a little spice. (optional)
