How to make Bruschetta:
Dice about 8 plum tomatoes (be sure to scrape the seeds out).
Mince 5-6 cloves of garlic.
Roughly chop 1/4 to 1/2 cup of fresh basil.
Put all of the above ingredients into a large bowl.
Pour about 2-3 tablespoons of olive oil in the bowl with the other ingredients and mix everything together with a spoon.
Sprinkle salt and pepper to taste and mix again.
For serving:
Preheat oven to 350°.
Place desired amount of sliced pieces of fresh Italian bread on a baking pan.
Cut fresh mozzarella cheese and place one slice on each slice of bread.
Place pan with bread/cheese in the oven for about 10 minutes (make sure cheese is melted on top of the bread before removing from oven).
Scoop Bruschetta mixture on top of each bread slice.
