Itβs so popular because itβs ridiculously easy to make and it tastes delicious. Thatβs why weβve decided to create another dish in the jambalaya family. Introducing the Italian Chicken Jambalaya!
Just like itβs big brother, this jambalaya is a healthy one pot recipe that the whole family will love. It uses simple ingredients and it has a delicious, rich, Mediterranean flavour. If, for some reason, you donβt have fennel in your cupboard, donβt skip it. Nip down to the shop and add it to your basket as youβll need it to add a wonderful fragrant spice to this dish and many other Italian dishes too.
Hereβs How To Make The High Protein Italian Chicken Jambalaya
1. Heat a large pan on the hob on a medium heat and add the olive oil. Add the onions, garlic, peppers and fennel seed and gently fry for 5 minutes.
2. Add the chicken and cook for a few more minutes until the chicken is lightly browned.
3. Add the uncooked rice, chopped tomatoes, mixed herbs, stock, black pepper and sun-dried tomatoes to the pan and give everything a good mix through.
4. Reduce the heat down to low and simmer, uncovered for 30-40 minutes until the majority of the liquid has been absorbed and the rice is cooked though.
5. Serve and enjoy.
