Hereโ€™s a recipe that uses all those pantry essentials. So those who are stocking piling on pasta and pasta sauces – yes you know who you are (!) – put them to good use in this popular Italian comfort food. Ingredients:
1 packet (250g) penne pasta
6 sausages of your choice
1 – 1.5 cups Italian marinara sauce
1 large tomato (chopped)
1 medium onion (chopped)
5-6 chestnut mushrooms (sliced)
2 tbsp passata or 1 tbsp tomato purรฉe
2 tbsp double cream (optional)
2 tbsp preserved anchovies (in oil) or 1 tbsp anchovy paste
2 tbsp grated parmesan Reggiano
2 – 4 tbsp grated cheddar cheese (optional)
2 tbsp olive oil (for cooking)
2 cloves of garlic (finely minced)
1 tbsp butter
50 – 70ml water or white wine
Few sprigs of fresh thyme
Few sprigs of fresh oregano
1 tsp dried oregano
1 tsp white pepper
Salt & pepper to taste
