Tiramisu is a coffee-flavoured Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavoured with cocoa.
Ingredients
* 6 large egg yolks, room temperature
* 3/4 cup sugar, divided
* 16oz. mascarpone cheese, room temperature
* 11/4 cup heavy cream or 6 egg whites
* Lady fingers 24 pieces
* 1 cup freshly brewed espresso or strong coffee, room temperature
* 1 tbsp sugar
* 1 tbsp Cocoa powder, for dusting
Preparation
1. Set a large heatproof bowl over a pan of simmering water to create a double boiler (the bowl should rest on the rim of the pan and the bottom should not touch the surface of the water).
2. Whisk together the egg yolks and half of the sugar in the bowl. Continue whisking until the sugar has dissolved, the mixture has increased slightly in volume, and it looks light yellow color. You can also use a hand mixer for this step, if you prefer.)
3. Remove the bowl from the double boiler and allow to cool for 10 minutes before mixing in the mascarpone cheese.
4. In a clean bowl, whip the egg whites/heavy cream and remaining sugar together with a hand mixer, for about 3-5 minutes until the egg whites hold stiff peaks.
5. Add the mascarpone cheese to the egg yolks and whip until combined.
6. Gently fold the stiff egg whites into the egg yolk mixture in 2 or 3 additions and set aside.
7. Make the cold expresso/ strong coffee: In a wide, shallow dish, whisk the sugar with the warm water, and the instant espresso powder/instant coffee powder. Stir to dissolve the sugar and espresso/coffee powder.
8. Dunk the ladyfingers in it to just long enough to get them wet, do not soak them.
9. Spread about one third of the cream into an even layer of 9×13 baking dish. Arrange the ladyfingers and then spoon half of the mascarpone mixture over the lady fingers.
10. Repeat the process with another layer of ladyfingers and finish with the remaining half of mascarpone mixture.
11. Refrigerate at least 4 hours, or overnight. When ready to serve, dust the top of the tiramisu with cocoa powder and serve immediately.
