Tangy, garlicy and tastes just like your favourite Italian sub! This recipe is inspired by an amazing chopped salad recipe I saw in an Italian restaurant. It is filling and perfect as a dinner salad but would also work as a great side dish.

Nutrition (per 1/4 recipe no tomatoes):
Energy – 249 Cal
Fat – 19.1 g
Sat Fat. – 4.9 g
Carbs – 10.2 g
Fibre – 1.3 g
Protein – 9.8 g

Italian Chopped Salad Recipe (4 servings per recipe):
– 1/2 head of Radicchio salad, chopped
– 1/2 head of Iceberg salad, chopped
– Juice of 1/2 lemon
– 4 slices of Provolone cheese, chopped
– 5 slices of Salami, chopped
– 1/2 Red onion, thinly sliced
– 1 Tbsp of fresh Basil and Oregano
– Salt & Pepper to taste
– Cherry tomatoes (optional)

Dressing:
– 3 Tbsp Balsamic Vinegar
– 3 Tbsp Extra-Virgin Olive Oil
– 1 tsp Oregano
– 1/2 tsp Sea salt
– 1 clove of Garlic, minced
– Black pepper

Instruction:
1. Whisk the dressing ingredients together in a small bowl and set aside.
2. Chop the radicchio and iceberg lettuce and place in a large bowl. Add the lemon juice, salt and pepper and mix.
3. Add the chopped provolone cheese, salami, red onion, fresh herbs and dressing.
4. Serve immediately, top with cherry tomatoes (optional)
