It was about time I shared my Italian gnocchi recipe. Don’t get intimidated by the name, that apparently is a bit tricky to pronounce to some, they’re actually pretty simple to make and so worth it. 🤩

Ingredients
* 1 kg potatoes
* 1 egg
* 290 g flour

The simplicity of this sauce is what makes it so special. Just Italian tomatoes, basil and salt, no other unnecessary ingredients. The flavor is authentic, comforting and exactly how an Italian nonna (or nonno) would make it. It’s a must-try.

Instructions:
1. Wash the potatoes and boil them whole, with the skin on, in salted water until fork-tender (about 30 minutes, depending on size).
2. Drain and peel while still warm.
3. On a clean work surface, add the flour and make a well in the center. Rice the potatoes directly into the well.
4. Let the potatoes cool slightly, then add the egg and a pinch of salt.
5. Gently bring everything together until a dough forms and avoid overworking it.
6. Divide the dough into portions and roll into long ropes.
7. Cut into small pieces and shape using a gnocchi board or fork, if desired.
8. Bring a pot of salted water to a boil and cook the gnocchi until they float (about 1 minute). Make sure you don’t overwork cook them or they will get very soft. Their cooking time is super fast.
9. Remove with a slotted spoon and toss with warm tomato sauce of choice.
10. Finish with grated Parmigiano, fresh basil, and buon appetito ✨

Tips for perfect gnocchi
* Use older potatoes (they’re less watery)
* Don’t overwork the dough or it will become sticky
* Avoid overboiling the potatoes—they’ll absorb too much water
* No gnocchi board? Use a fork, or leave them as they are

    Are gnocchi supposed to be really dense in the center?

    If not, and you cook some and they come out that way, what's a good way to fix them?
