A viewer recently wrote to us expressing some frustration that a relative, due to celiac disease, can’t enjoy classic Italian pasta recipes. We were quick to point out that just about every pasta dish can be adapted to use rice. And that got us thinking…
Even if one has no problem eating pasta, there are some really good reasons why everyone should try using rice in some of their favorite “pasta” recipes. You might be surprised to find you even prefer the rice version!
BUT: it’s not just as simple as replacing the pasta with rice. Depending on what kind of pasta dish you’re trying to recreate, there are a few different approaches you can take and tricks you should know to get the best results. In this video, we’re taking a look at a few different kinds of classic pasta recipes and how to turn them into delicious rice dishes!

They tried to shift Italian tastes from pasta [most of the hard durum wheat was imported] to home grown rice [the Po Valley being a major producer] under Mussolini….it didn't work.

What do you do to reduce the arsenic content of the rice?
In the 90's I found in a supermarket a box of polenta white flower from Italy. I prepared just as an Al Alfredo recipe. I u try it, we can talk about love later.

I love risotto, but it takes a long time to make. Would making risotto in a rice cooker or pressure cooker be any good?

That first one is nice if you use an electric kettle. You need so much cheese for it to taste good tho and the rice cooks way quicker for me.

Mussolini basically banned pasta. He claimed that it made people fat and lazy. Italians were ordered to eat rice. After Mussolini was done away with, people celebrated in their town squares with huge pasta parties.
Coeliac disease is common enough in Italy that each child is tested by age 5 years.
I got the concept, although pasta is not rice 😜. And more is more by definition, but sometimes, like in Italian cuisine, it can mean 'less is more', but it is actually not too much, so just right by definition 😉. The concept of 'less is more' is not mathematically correct, and my physics mind is always angry about the concept 😅. And even if it is correct in this meaning, it is definitely not usual, but rather from time to time, because otherwise the definition of 'more' would always be wrong and couldn't mean 'more' anymore. This is what this situation does to my brain hahahaha. Please don't overuse it 😂

Ma basta con queste stronzate da internet. La pasta burro è parmigiano l'hanno sempre mangiata tutti in italia basta con questa stronzata che in italia non esiste la pasta alfredo, è una burro e parmigiano.

A few years ago, as a newly diagnosed coeliac. I tried quite a few different types of pasta from supermarkets and they were not good. Finally found an Italian brand, Rummo, which is just amazing. Having visited Italy a couple of times, since my diagnosis, they are fully clued up on gluten free/coeliac and so eating out was never a problem. I’d definitely give the Italian brands a try. Also excited to see the rice options as rice is much more available and cheaper!

my late mom made that rise with beans and the tomato all the time. they had all ways. inc. cauliflower with beans, i think of all the italian peasant dishes that i turned my nose up at and now miss the smell, her cooking and regret not tasting/eating it

Gonna make the fagioli dish today, gonna substitute sushi rice, chicken sausage & fresh tomatoes. Wish me luck! LOL
