Yesterday I asked what I should cook with the wild asparagus I had just picked… and almost everyone said the same thing: ravioli.
Honestly, I couldn’t agree more.

  2. The fact that you’re using an Imperia pasta machine makes me very happy. I’ll explain. I live in the United States and my mother, who resides up in Heaven now, bought me a pasta machine for my birthday years ago. It was a Marcato machine. I lost it because I was irresponsible and I told her that it “broke” because I didn’t want to tell her the real reason. She bought me an Imperia pasta machine as a replacement. It works totally fine, but I always felt bad that I didn’t have the original Marcato machine because that seems to be the one I see people using more often online. The fact that you’re using an Imperia machine makes me happy because if it’s good enough for you, it’s good enough for me. I always imagined my mother going into a shop and disregarding the Marcato machine as a replacement because I lied and told her it broke and then buying an Imperia machine instead, which I kind thought wasn’t as good. However, as I wrote, if it’s good enough for you, it’s good enough for me too. I feel a lot better about the replacement pasta machine she bought me now. Thank you!!!
