🥘 Ingredients
4 large bell peppers (any color)
2 lb ground turkey
1 cup cooked rice (white or brown)
1 small onion, diced
2 cloves garlic, minced
1 can (14–15 oz) crush tomatoes
1 tsp Italian seasoning or chicken bullion
Salt & pepper to taste
1 cup shredded cheese (cheddar, mozzarella, or blend)
Fresh parsley (for garnish)
🔪 Instructions
1. Prep the peppers
Preheat oven to 350°F
Cut peppers in half lengthwise and remove seeds
Place them in a baking dish, cut side up
Brush with oil
2. Cook the filling
Heat a skillet over medium heat
Cook onion for 2–3 minutes until soft
Add garlic and cook 30 seconds
Add ground turkey and cook until browned
Stir in:
diced tomatoes
tomato sauce
cooked rice
Italian seasoning, salt & pepper
Simmer for about 5 minutes
3. Stuff the peppers
Spoon the turkey mixture into each pepper half
Top with shredded cheese
4. Bake for 20 minutes until cheese is melted and bubbly
5. Serve
Garnish with fresh parsley, serve over extra ground meat
💡 Tips
Swap rice for quinoa or cauliflower rice for a low-carb version
Add black beans or corn for extra texture
Use marinara instead of plain tomato sauce for richer flavor
