Pasta e Ceci is an easy Italian weeknight dinner made with simple ingredients. Two cans of chickpeas, some pasta, and one pot. Budget-friendly, comforting, and perfect for feeding the whole family. It’s also a great way to get more beans into your diet! 🇮🇹

Ingredients:
1 lb tubetti rigati or ditalini
2 cans chickpeas, rinsed and drained
2 tbsp tomato paste
4 garlic cloves (whole)
2 sprigs rosemary
Olive oil
Salt
7 cups water (adjust if needed)
Directions:
1. In a pot, sauté garlic and rosemary in olive oil over medium heat until fragrant.
2. Add chickpeas and sauté for a few minutes to coat in the flavors. Remove garlic and rosemary.
3. Stir in tomato paste, then add water. Simmer gently for about 20 minutes.
4. Blend roughly half of the chickpeas, then return to the pot.
5. Add the pasta. Season with salt and adjust water if needed.
6. Cook until the pasta is tender and the broth becomes creamy.

I have, however, a question, and it generally applies to cooking past in liquid in a pan like you do: could you please name the ratio of liquid to pasta? So that it's not too much, not too little, just right? And in the end it's all creamy and perfect, neither watery nor dry?
I know it comes from experience, when you just know™. Bit I'm not there just yet and have a hard time guessing.

Oh wow this is a delicious recipe to work with!! I only had onions and some leftover meat while making this and it was really good, that rosemary and garlic flavour could be nice to have too, but the sauce with like half the chickpeas worked awesome.

I have tried this dish now and it is s gold but Ibused dry chickpeas instead and thyme I had non rosemary at home but it was good and easy to cook, 🥇.

Tried this tonight and even if I deviated slightly and also messed it up a little (my own fault for not thinking properly when I translated into metric system), it was such a big bowl of comfort yumminess. I used dried rosemary since I didn’t have any fresh sprigs… and I bet fresh is sensational in this but but it was still REALLY good! I added some frozen spinach (needed to be used up) and nutritional yeast at the end and served with freshly ground chiliflakes. Definitely a repeat dish in my house. Thank you!
