Zuppa Toscana soup
Ingredients:
-1 pound Italian sausage (mild, sweet, or hot)
-4–5 medium russet or yellow potatoes, peeled and cut into cubes
-1 medium white or sweet onion, diced (I used frozen diced)
-2 32 oz boxes of chicken broth
-2 cups water
-3–4 cloves garlic, minced (I used the jar price diced garlic)
-2 cups chopped kale or one bundle (or spinach/Swiss chard as alternatives)
-1 cup heavy cream or half-and-half (for dairy-free, use full-fat coconut milk)
4 slices bacon, chopped (or pre-cooked bacon bits)
-Salt and freshly ground black pepper, to taste
-Grated Parmesan or Pecorino Romano for garnish (optional)
