  4. For next time: Chocolate chips mixed in with the ricotta cheese, and dip the edges of the cannoli in pistachio or candied fruit! Orange peal etc.

  6. I think the milk stops the cannoli from getting crispy and crunchy. Try adding a bit of butter or oil, next time.

  7. My grandfather was a caterer and from New Orleans. He wasn’t Italian and wasn’t much of a baker, but he loved making cannolis. He told me, “At least with cannoli, you can put cream and sugar in your mistakes.”

  8. I made Lemon cannoli Last Year for Resurrection Sunday. I bought the cannoli shells made in Italy from the store and made the filling myself. EVERYONE Loved them including me.
