Jack Skipper is here to lend a hand and help someone surprise a special person in their life with a home-cooked meal.

In this episode, Jack’s helping new mum Sharnelle, who wants to thank her boyfriend for supporting her through a difficult pregnancy. Now that Sharnelle and James are settled with their new baby, Sharnelle wants to serve up a delicious home-cooked meal and spend some relaxing quality time together, and their first official date night since their baby was born.

Inspired by James’ signature dish, Jack Skipper helps Sharnelle level it up, adding an exciting and delicious twist to their dinner table. Using fajita seasoning, crème fraiche and sun-dried tomatoes, they’re cooking up a classic chicken in white wine sauce in a completely new style. The chicken is paired with tender stem broccoli, creamy mash potatoes and served with a refreshing glass of lemon and basil spritz. Fajita-Spiced Chicken with Tuscan Sauce

Ingredients
Main
● Chicken
● 4 large chicken thighs
● 1 tbsp olive oil
● 1 sachet Maggi Fajita Seasoning
● Tuscan sauce
● 1 tsp olive oil
● 2 garlic cloves, minced
● 3 shallots
● 2 tbsp tomato paste
● 80ml white wine
● 200ml low salt chicken stock
● 3tbsp low fat creme fraiche
● 12 sun-dried tomatoes, sliced
● 50g parmesan
● 2 handfuls spinach
● Black pepper
● Basil leaves (optional)
Sides
● 600g potatoes
● 3tbsp semi-skimmed milk
Broccoli
● 300g tenderstem broccoli

Method
1. Rub the chicken with oil and Fajita seasoning
2. Air fry at 190 for 16-18 minutes.
3. Meanwhile, boil potatoes and mash with milk.
4. Sauté garlic and shallots in oil. Add the wine and reduce slightly.
5. Add the tomato paste and sun-dried tomatoes, heat for a minute before adding the stock and creme fraiche. Stir well.
6. Add spinach leaves to wilt.
7. Add parmesan and season with black pepper.
8. Add the broccoli to the air fryer until charred.
9. Serve chicken sliced on the sauce. Mash and broccoli to side and sprinkle parmesan and basil leaves.
