🧾 Ingredients
• 2 tbsp butter
• 4–5 cloves garlic (finely chopped)
• 1 medium onion (finely chopped)
• 1 small capsicum (chopped)
• 1 small carrot (finely chopped)
• ¼ cup sweet corn
• 1 cup full-fat cream
• 1–1.5 cups boiled pasta
• 1 tsp dried oregano
• 1 tsp mixed herbs
• ½ tsp black pepper powder
• ½ tsp chilli flakes (plus extra for garnish)
• Salt to taste
• ¼ cup grated cheese
• Splash of water (as needed)

👩🍳 Method
1. Heat the butter
Place a pan on medium heat and add butter. Let it melt.
2. Sauté garlic
Add finely chopped garlic and sauté for a few seconds until fragrant (do not burn).
3. Add onions and capsicum
Add chopped onions and capsicum. Sauté until slightly soft.
4. Add carrots and corn
Add chopped carrots and sweet corn. Cook for 2–3 minutes while stirring.
5. Stop overcooking
Add a small splash of water to prevent overcooking and keep the vegetables slightly crunchy.
6. Add cream
Pour in the full-fat cream and bring it to a gentle boil.
7. Season the sauce
Add oregano, mixed herbs, black pepper, chilli flakes, and salt. Mix well.
8. Add pasta
Add the boiled pasta and mix until well coated with the sauce.
9. Adjust consistency
If needed, add a little more cream (or a splash of water) to get the desired consistency. Stir well.
10. Finish with cheese and butter
Turn off the heat. Add grated cheese and a small knob of butter. Stir until melted and the sauce becomes smooth and silky.
11. Serve
Plate the pasta and garnish with extra cheese and chilli flakes.
