These soft, fluffy mini pizzas bring back so many memories. I’d grab one from the bakery on my way to school as a little treat during recess. Now I can make them at home with a simple dough, a quick tomato sauce, and a finish of melty cheese just like the originals.
Ingredients:
500 g bread/pizza flour (4 cups)
190 ml lukewarm milk (¾ cup + 1 tbsp)
130 ml lukewarm water (½ cup + 1 tbsp)
20 ml olive oil (1 tbsp + 1 tsp)
12 g salt (2 tsp)
20 g honey (1 tbsp)
2 g dry yeast (¾ tsp)
Instructions:
1. In a bowl, mix milk, water, yeast, and honey. Mix it well until the yeast and honey are dissolved in the liquid mixture.
2. Add flour and stir it a little bit. Then add salt and mix everything together.
3. Gradually pour in the olive oil and incorporate it completely to the mixture.
4. In a clean counter, knead until you get a smooth, soft dough.
5. Cover with surround wrap and let it rise for about 2 hours, or until doubled in size. I suggest putting it in the oven off with the light on to provide an extra warmth.
6. Divide the dough into 6 or 8 equal portions and shape into balls. Cover them and let them rest for another hour.
7. Meanwhile, prepare a simple sauce with crushed tomato, olive oil, salt, oregano, and basil.
8. Gently flatten each dough ball and spread sauce on top.
9. Bake in a preheated oven at 445°F (230°C) for about 12–15 minutes.
10. Add well drained mozzarella cheese in the last 3 minutes of baking.
11. You can add a drizzle of fresh olive oil on top, extra oregano and fresh basil. Enjoy warm, soft, fluffy, and just like an Italian bakery.
