
I got inspired by June Kang’s Homemade Italian Sausage.
If you can’t find authentic Italian sausage at the store, this is the ultimate kitchen hack. The secret is all in the Fennel Seeds. It turns basic ground pork into that high-end deli flavor, making even a simple jar of store-bought sauce taste like a restaurant dish.
The 4-Ingredient "Sausage" Meatballs (12-15 meatballs)
* 500g Ground Pork (an 80/20 fat ratio is best for juiciness).
* 1 tbsp Fennel Seeds (The absolute MVP—do not skip this!).
* 1 tbsp Minced Garlic.
* 1 tsp Red Pepper Flakes (plus a pinch of salt and pepper).
Instructions: Mix the ingredients and roll them into bite-sized balls. Brown them in a pan with olive oil for about 6–8 minutes until they have a nice crust.
The Sauce
(if you wanna make it from scratch, that’s even better 🙂)
* 1 Jar of your favorite Tomato Sauce (Marinara or Arrabbiata).
* Pasta Water (The "liquid gold").
Instructions:
Once the meatballs are browned, pour the entire jar of sauce directly into the pan.
Let it simmer on low for 10 minutes while your spaghetti boils.
The Magic: The fennel and garlic from the meat will seep into the jarred sauce, completely transforming the flavor profile.
The Perfect Finish
* The Toss: Move your al dente spaghetti straight into the sauce pan.
* The Secret: Add 1/4 cup of starchy pasta water. Toss vigorously until the sauce is glossy and clings to every noodle.
* Garnish: Top with any kind of cheese you have in the refrigerator and some organic parsley flakes
