This is a hearty Italian meal that will be ready in no time. Substitute whatever vegetables you have in the fridge. Enjoy! Here is the recipe:
Ingredients
1/4 medium onion
1 1/4 cup, pieces or slices mushrooms, white
1/2 cup diced zucchini
2 clove garlic
1 tablespoon olive oil
14.5 ounce diced tomatoes, canned
/2 tablespoon Italian Seasoning
1/2 teaspoon salt
1 cup spinach
9 ounce package Gnocchi (i used Nevo gluten free)
1/2 cup vegan Parmesan cheese, grated (i used Kellys Croutons brand)
Steps
Dice onion and slice mushrooms (if not pre-sliced). Mince garlic.
Heat a large skillet with high sides (or stockpot) over medium heat. Add olive oil and saute onions mushrooms and zucchini until the onions begin to go translucent (4-5 minutes). Add garlic and saute for another 30 seconds.
Pour in diced tomatoes (including the juice) and add Italian seasonings and salt. Add uncooked gnocchi and stir together. Add 1 cups of spinach and stir.
Once spinach wilts, Simmer for 3-4 minutes, until the gnocchi is cooked. Stir in vegan Parmesan cheese and serve warm.
