Sauce: grated onions sautéed in olive oil until translucent, add fresh cracked pepper, stir in tomato paste. Add fresh finely diced garlic for 1 minute. Add passata, bring to simmer. Add 2 sprigs basil and parsley and simmer for 20 minutes. When pasta finishes, add four table spoons pasta water to sauce.

Mix with pasta, top with finely diced basil and parsley.
