There is nothing better on a cold winter evening than a big pot of creamy sausage soup simmering on the stove.
In this episode of the Everyday at Home, Scottie joins me in the kitchen to make a rich and comforting Italian sausage soup that came from a dear friendβs family recipe. Itβs filled with spicy Italian sausage, garlic, spinach, chicken broth, cream, sharp cheddar, and bacon β and it comes together in about 15β20 minutes once your ingredients are ready.
You can make it your own:
β’ Use spicy or mild sausage
β’ Add potatoes instead of noodles
β’ Substitute tagliatelle, beans, or even cannellini beans
β’ Adjust the cream to your preference
We served it with fresh sourdough bread, toasted and buttered, and it truly feels like the perfect winter dinner.

Ingredients:
β 1 pound spicy Italian sausage, cooked and drained
β 4β6 slices bacon, cooked and crumbled (reserve a few tablespoons bacon grease)
β 1 medium onion, diced
β 3 cloves garlic, minced
β 6 cups chicken broth
β 1 small package fresh spinach
β 1 cup heavy cream
β 1 cup sharp cheddar cheese, shredded
β Salt, to taste
β Black pepper, to taste
Instructions:
Step 1: In a large pot, cook and drain the Italian sausage. Set aside.
Step 2: Cook the bacon until crisp. Reserve a few tablespoons of bacon grease in the pot for flavor.
Step 3: Add the diced onion and minced garlic to the pot with the sausage and cook for 3β4 minutes until softened.
Step 4: Pour in 6 cups of chicken broth and bring to a gentle simmer.
Step 5: If using noodles or potatoes, add them now and simmer until tender.
Step 6: Stir in the fresh spinach and allow it to wilt.
Step 7: Add 1 cup heavy cream and 1 cup shredded sharp cheddar cheese. Stir until melted and combined.
Step 8: Season with salt and pepper to taste.
Step 9: Garnish with crumbled bacon before serving.
Optional substitutions:
Tagliatelle noodles or diced potatoes
Cannellini beans
Mild sausage instead of spicy

Tried this recipe and this has now become our very favorite. Thank you for sharing. The only thing i changed was p;utting in hot sausage, (less than half) along with 1 pound of sweet sausage. Itβs a real winner.
