Morning mom has so much more bandwidth to make dinner than evening mom!
Dump this yummy dinner in the slow cooker in the morning, and then literally just serve it at dinner time.
(Bonus: this one is from our Low Carb Menu Plan so it’s just 5 net carbs per serving! Healthy and delicious — win win! 💓)
Low Carb Italian Beef in the Slow Cooker 🥩
Ingredients:
• 4 lb boneless beef chuck roast, trimmed
• 2 tsps salt
• 1 tsp pepper
• 2 cups beef stock
• 12 oz jar whole pepperoncini peppers with juice
• 1 large yellow onion, sliced
• 5 garlic cloves, minced
• 2 tbsps Italian seasoning
• 1 tsp onion powder
• 1 bay leaf
• 8 pieces sliced provolone cheese
Instructions:
1️⃣ Season roast with salt and pepper. In large skillet, sear roast on all sides. (Note: I was especially short on energy this day so I skipped this step!)
2️⃣ In slow cooker, add stock, pepperoncini peppers, onions, garlic, Italian seasoning, onion powder, and bay leaf; stir to combine. Transfer roast into slow cooker. Cover and cook on low 7–8 hours. (If your roast is smaller, check at the 5–6 hour mark so it doesn’t dry out.)
3️⃣ Remove lid and reduce to warm heat. Drain 3–4 cups of liquid into bowl, skim off fat, and strain to remove solids. Simmer 4–5 minutes, then transfer mixture to serving bowl.
4️⃣ Shred beef using two forks and arrange on platter. Add onions, pepperoncini peppers (discard stems), and layer with cheese.
5️⃣ Serve with reduced liquid as dipping sauce.
