Butterbean Carbonara topped with Crispy bacon crumb.. creamy, rich, no regrets!

100g Tesco Finest Alderwood Smoked Streaky Bacon
600g butter beans, a couple tbsp bean stock saved
70g parmesan, grated
2 whole eggs, 1 yolk
A load of cracked black pepper
Pinch of salt

1. Fry the bacon until crisp then chop into crumbs, save the bacon fat
2. Mix the eggs and parmesan in a bowl then slowly drizzle in half the saved bacon fat and mix together. Season with lots of black pepper and a little salt.
3. In the same pan the bacon was cooked in add the beans and heat on medium until warmed through.
4. Take off the heat then add the cheese egg mixture and mix until silky and smooth, adding the beans juice to thicken if needed.
5. Serve and sprinkle with the bacon crumb and more parmesan cheese.
