More complicated the aparatus, more hard to clean it if not imposible, What you cant clean properly becomes breeding ground for mold ect. Same reason i like knifes that are one modl steel there are no gaps food gets stuck and its easy to clean. This tool is usefull for someone who works in kitchen for hours with this tool a day. But i wonder how long it will last with base from plastic.
