I did use fresh grated Parmigiano Reggiano, substituted the ground pork for ground Italian sausage, and made my own bread crumbs.
Pasta was simple, 200 grams of Semolina flour, and 200 grams of 00 (double zero) flour, 4 large eggs, EVOO, salt, and used my Kitchen aid Pasta attachment for the spaghetti!
