
I’ve been working through Pasta by Hand from Jenn Louis. This is today’s recipe.
Who knew that throwing ice water at flour would yield pasta?

For 6(I cut in in 1/4)
900 g/4 cups ice water
910g/51/4 cups+2TBSP semolina flour
Line a baking sheet with parchment paper.
Place half flour on sheet and spread evenly.
Dip hand into ice water and drip several large droplets onto flour. Use metal bench scraper to turn flour to create small dough kayak and transfer to a mesh strainer, shake out second baking sheet. Repeat until flour is gone.
