I was planning ahead for today knowing cold weather was coming and had all ingredients at hand. I made homemade ricotta (whole milk and lemon juice) and made a filling with ricotta, Parmesan, egg, smoked old cheddar and pepper. Pasta was 3 cups 00, 1 c semolina, 4 eggs salt olive oil and 3/4 c water (dry weather here) attempted to make hundreds of ravioli thinking it would be easy to make perfect little rounds but it was a fail. Will make a big lasagne instead with all the leftover pasta. lol. I don’t know how people make those perfect little rounds!
