So I regularly cook pizza and always read that the ooni should be 400-450⁰c. However, I am in Italy now, been to the same pizza place a few days in a row and the pizza is the best Ive ever had. I checked the chefs oven, it was a large rotating one but the temp was set to 310⁰c. Anyone able to explain that?

    A lot of people want to cook their pizzas at 800-900 degrees and i do enjoy that but i actually run my oven around 750 and like the cook just a bit more. Still light and airy but also just a bit crispier. Instead of a 90 second cook i’ll run more towards a 2&1/2 to 3 minute cook.
