Butternut Squash and Sausage Skillet
Ingredients
* 2 tbsp olive oil, divided
* 2 cups butternut squash, cubed 
* 1 small yellow onion, diced
* 3-4 cloves garlic, minced 
* 1 lb Italian chicken sausage 
* 2 tbsp tomato paste 
* 2 tsp italian seasoning 
* 1 cup cooked quinoa 
* ¼ cup vegetable broth 
* 1 tsp dijon mustard 
* 1 cup shredded kale
* ½ cup gruyere or sharp white cheddar cheese
* Kosher salt and black pepper
* Fresh parsley, to serve 

Directions
1. Preheat oven to 425F. Toss butternut squash in 1 tbsp olive oil, 3/4 tsp kosher salt, and black pepper. Spread out into a single layer. Roast for 20-25 min until soft and golden brown. 
2. Meanwhile, heat remaining 1 tbsp oil in a large oven safe skillet. Saute onion and garlic until soft. Add sausage and break apart. Cook until browned. Stir in tomato paste italian seasoning and cook for 2-3 min.
3. Stir in quinoa, vegetable broth, and dijon. Bring to a simmer and cook for 4-5 min. Stir in kale then season with salt and pepper to taste. 
4. Top skillet with shredded cheese. Broil on high for 30-45 seconds until brown. Serve with parsley and enjoy!

    Maybe some mozzarella on top… ill test it first before going bonkers with the cheese
