Here is how I did it! Creamy Caramelized Cabbage & Onion Pasta Ingredients • 4 tablespoons salted butter • 2 tablespoons olive oil • 1 white onion, thinly sliced • 1/2 of a cabbage, thinly sliced • 1 teaspoon salt • 1 tablespoon sugar • 4 cloves garlic, grated • 1 cup heavy cream • 1/2 cup reserved pasta cooking water • 1/2 pound pasta • Freshly cracked black pepper Instructions In a large skillet over low heat, melt the butter and olive oil together. Add the sliced onion and cabbage along with the salt and sugar. Cook low and slow for about 40 minutes, stirring every few minutes, until very soft and deeply tender. Increase the heat to medium and continue cooking for about 5 more minutes, until the cabbage and onions begin to turn golden and caramelized. While they finish cooking, boil the pasta according to package instructions, reserving 1/2 cup of the pasta water before draining. Once the cabbage mixture is golden, add the grated garlic and cook just until fragrant, about 30 seconds. Reduce the heat to low and slowly stir in the heavy cream. Let it gently simmer and thicken. If the sauce becomes too thick, add a splash of the reserved pasta water until it reaches a silky consistency. Add the drained pasta directly to the skillet and toss until fully coated. Remove from heat, top with freshly cracked black pepper, and enjoy.

  1. The same dish without the cream is something my maternal grandmother used to make for me. The Slovak name for it is "Halusky Kapusta," which translates to "Sweet Cabbage With Noodles."
