






I made this Simple Chicken Stir Fry with Rice Noodles for dinner and it turned out so good I had to share it. It’s quick, made with simple ingredients, and perfect for busy weeknights.
Tender chicken, fresh vegetables, soft rice noodles, and soy sauce all tossed together in one pan. It tastes like takeout, but it’s homemade and much fresher.
Here’s the full recipe:
Ingredients:
- 250 g (8–9 oz) rice noodles
- 2 chicken breasts, cut into bite-sized pieces
- 2 tablespoons oil
- 1 medium onion, sliced
- 1 large carrot, cut into thin sticks
- 200 g (7 oz) mushrooms, sliced
- 1 red bell pepper, thinly sliced
- 3 tablespoons soy sauce (or to taste)
- Salt and black pepper
- 2 green onions, chopped
Steps:
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the chicken and cook until golden and fully cooked. Remove and set aside.
- In the same pan, add the remaining oil and cook the onion, carrot, mushrooms, and red bell pepper for 4–6 minutes, until tender but still slightly crisp. Season with salt and pepper.
- Add the drained noodles to the pan and toss with the vegetables.
- Add the cooked chicken back in, pour over the soy sauce, and mix everything well.
- Cook for another 1–2 minutes until heated through. Top with chopped green onions and serve.
