  8. When starting with the pancetta do not heat the pan first, your pan must be cold, put yhe pancetta in the pan, turn on the heat. 😊

  9. Traditional old world Bolognese doesn't have tomato in it. This is more of an American Bolognese in the video. Some Italians may add a tablespoon of tomato puree, but other than that, Bolognese is not traditionally a tomato forward sauce.

  10. Southern Italy we make it like yours in the north instead of tomato puree. They only put concentrates, I come from the south. I prefer yours
