Used an Uuni 3 for many years with pellets and only did Neo style. Got a new oven for Christmas that does gas. Tried to start on a screen and transfer to the stone halfway through and got a little rip. Dough was the NY recipe from the book Elements of Pizza. Basic cheese, Hormel cup and char pep, pec ramano finish. Dough wasn't right but it's my fault with the oven. First pizza I've made in over 5 years.
